Ingredients
  

  • Lamb lollipops 8 pieces
  • Olive oil 2 tbsp
  • Garlic minced 3 cloves
  • Fresh rosemary 1 tbsp
  • Lemon juice 1 tbsp
  • Salt and pepper To taste

Prepare the Marinade

  • In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Coat lamb lollipops evenly with the mixture. Let sit for at least 10 minutes.

Sear the Lamb

  • Heat a skillet or grill pan over medium-high heat. Place lamb lollipops and sear for 2–3 minutes per side until browned.

Cook to Desired Doneness

  • Continue cooking until internal temperature reaches 130°F (54°C) for medium-rare, or adjust based on preference.

Rest the Meat

  • Remove from heat and let rest for 5 minutes. This keeps them juicy and flavorful.
