  • 2 tablespoons Olive oil
  • 4 cloves Garlic smashed
  • 2 sprigs Fresh rosemary
  • 3 tablespoons Butter
  • Kosher salt and cracked black pepper
  • Lemon half, for finishing

Instructions
 

Step 1: Prepare the lamb and season it generously

  • Pull the chops out thirty minutes before cooking. Cold meat hits a hot pan unevenly
    Pat the chops dry. Season both sides generously with salt and pepper — don’t be shy here, lamb needs it.

Step 2: Heat the Pan Properly Sear Without Moving

  • Get a heavy skillet, preferably cast iron, screaming hot before the oil goes in.
    Lay the chops in the pan and leave them alone for 2 to 3 minutes per side. Resist poking or flipping early; that crust needs time to form.

Step 3: Baste with Garlic Butter

  • Add butter, smashed garlic, and rosemary once you flip. Tilt the pan slightly and spoon that fragrant butter over the chops for the last minute.

Step 4: Rest Before Serving

  • Pull them off around 130-135°F for medium-rare. Let them rest 5 minutes — cutting too soon just drains the juices onto your cutting board.
