Ingredients

  • Wagyu ground beef 80/20 blend
  • Salt & freshly cracked black pepper
  • Brioche buns
  • Butter
  • Cheese
  • Toppings

Instructions

Step 1: Shape the Patties

  • Gently form 4 oz portions into round, flat patties. Don’t overwork the meat trust me

Step 2: Season Lightly

  • Sprinkle with salt and pepper right before cooking. Too early and the salt pulls out moisture and nobody wants a dry patty.

Step 3: Cook the Patties

  • Place your cast iron skillet on medium-high. Lay the patties on the skillet. Don’t move them for the first 2–3 minutes let them sear.

Step 4: Toast the Buns

  • Spread butter on each bun and toast them face down for about 30 seconds. They should be golden and crisp on the edges.

Step 5: Assemble the Burger

  • Here comes the magic moment. Bottom bun first, a layer of sauce, patty, toppings of choice, then the top bun
