Ingredients

  • 2 pounds of turkey necks
  • 2 tablespoons olive oil
  • 1 large onion diced
  • 3 cloves of garlic minced
  • 1 green bell pepper chopped
  • 2 stalks of celery sliced
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper
  • 1 teaspoon thyme
  • 2 cups chicken broth
  • 1 tablespoon Worcestershire sauce
  • Salt and black pepper to taste

Instructions

Step 1: Season and Sear the Turkey Necks

  • Pat the turkey necks dry. Season them with salt, pepper, and paprika. Heat olive oil in your pot over medium high heat and sear the necks until golden brown on each side.

Step 2: Build the Flavor Base

  • Add onions, garlic, celery, and bell pepper right into the same pot. Stir until they start softening and your kitchen smells like heaven.

Step 3: Add Liquid and Spices

  • Now pour in chicken broth and sauce. Sprinkle thyme and cayenne. Stir well. Bring it to a gentle simmer.

Step 4: Simmer Slowly

  • Cover the pot, reduce the heat, and let it simmer for about an hour. Stir occasionally. You’ll notice the meat becoming tender and the broth thickening into a silky sauce.

Step 5: Taste, Adjust, Serve

  • Taste for seasoning (trust your tongue). A pinch more salt or a touch of pepper can make a world of difference
