Ingredients

  • branzino fillets
  • olive oil
  • garlic cloves minced finely
  • Juice of 1 lemon
  • Sea salt
  • freshly cracked
  • black pepper
  • butter
  • Fresh herbs

Instructions

Step 1: Pat and Season

  • Start by patting the branzino fillets completely dry with paper towels. Don’t skip this. Moisture ruins that golden crust. Sprinkle salt, pepper, and a bit of lemon zest.

Step 2: Heat the Pan

  • Place your skillet over medium-high heat. Add olive oil and let it shimmer.

Step 3: Sear the Skin

  • Lay the fillet skin-side down. Press it gently with a spatula for 20 seconds so it doesn’t curl.

Step 4: Flip and Finish

  • Flip carefully. Add a tablespoon of butter, minced garlic, and herbs. Spoon the melted butter over the top a mini “baste bath.”
