  • Bell peppers 2 medium

  • Olive oil 2 tablespoons

  • Ground cumin 1 teaspoon
  • Garlic powder 1 teaspoon
  • Paprika 1/2 teaspoon
  • Mexican oregano 1/2 teaspoon
  • Ground coriander 1/4 teaspoon
  • Onion powder 1/4 teaspoon
  • Cayenne 1/8 teaspoon

  • Large flour tortillas 6-8 pieces
  • Mexican cheese blend 2 cups
  • Fresh cilantro 1/2 cup
  • Lime 1 whole

Instructions
 

Preparing the Signature Beef Filling

  • Warm olive oil in your skillet on medium-high heat.
    Add diced onions, cooking until translucent (about 3-4 minutes)Incorporate minced garlic, sautéing for 30 seconds until fragrant
    Add ground beef, breaking it apart with your spatula
    Once beef is partially cooked, mix in your seasoning blend
    Add bell peppers and continue cooking until beef is done and vegetables are tenderRemove extra fat if preferred

Assemble the Quesadillas

  • Wipe your skillet clean and return to medium heat
    Place a tortilla in the pan
    Sprinkle cheese on one half of the tortilla
    Incorporate a ample amount of the beef mixture
    Top with additional cheese
    Fold the empty half over, creating a half-moon shape
    Cook until golden brown (2-3 minutes per side)
