- 1.5 lbs boneless skinless chicken breast or thighs
- 2 packages 5.2 oz each Boursin cheese, garlic and fine herbs flavor
- 1 lb pasta of your choice
- 3 tablespoons olive oil divided
- 4 cloves garlic minced
- 1.5 cups chicken broth low sodium preferred
- 1 cup reserved pasta water
- ½ cup freshly grated parmesan
- 2 taste Salt and freshly cracked black pepper
- Fresh parsley or basil chopped,
- 2 cups baby spinach
- 8 oz sliced mushrooms
- Red pepper flakes
1. Season and Sear the Chicken
Pat the chicken dry, then season it generously with salt and pepper. Heat 2 tablespoons of olive oil in a heavy skillet over medium-high heat.Sear the chicken pieces for about 5–6 minutes, turning them once, until they’re golden brown and fully cooked. Remove them and set aside on a plate.
3. Build the Garlic Base and Melt in the Boursin
In the same skillet, add the remaining olive oil and minced garlic. Sauté for about 30 seconds, just until fragrant Lower the heat and add the chicken broth, then crumble in the Porsin cheese. Whisk the mixture until the cheese melts and the sauce becomes smooth and glossy.
4. Bring It All Together
Add the drained pasta to the pan with the chicken. Add the reserved pasta water until the sauce perfectly coats all the ingredients.If you’re adding spinach or mushrooms, stir them in now and let the ingredients simmer over low heat for 2–3 minutes until they’re thoroughly heated through and the sauce has thickened slightly.
