  • 2 pounds bone-in chicken thighs or a whole chicken
  • 10 cups chicken broth
  • 3 medium carrots sliced
  • 3 celery stalks chopped
  • 1 large yellow onion diced
  • 4 garlic cloves minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon parsley
  • Salt and black pepper to taste
  • 8 ounces egg noodles
  • 2 tablespoons olive oil

Step 1: Build the Flavor Base

  • Heat olive oil in a large pot over medium heat. Add onions, celery, and carrots. Cook until softened and fragrant.

Step 2: Add Garlic and Herbs

Step 3: Simmer the Chicken

Step 4: Remove and Shred

Step 5: Cook the Noodles

  • Return shredded chicken to the pot. Add egg noodles and continue simmering until tender.

Step 6: Taste and Adjust

Step 7: Serve and Enjoy
