Ingredients

  • Whole chicken 3-4 lbs
  • Cornbread day-old preferred
  • White bread slices
  • Chicken broth
  • Eggs
  • Yellow onions
  • Celery stalks
  • Fresh sage
  • Poultry seasoning
  • Salt and black pepper

Instructions

Step 1: Prepare the Foundation

  • Season your whole chicken inside and out with salt, pepper, and poultry seasoning. Truth be told, don't skip the cavity seasoning - it makes a world of difference in the final flavor profile.

Step 2: Create the Dressing Base

  • Crumble day-old cornbread and bread into bite-sized pieces. Sauté diced onions and celery until translucent. The vegetables should be tender but not mushy - believe it or not, this texture contrast is crucial.

Step 3: Combine and Bind

  • Mix crumbled bread with sautéed vegetables, beaten eggs, and enough warm broth to achieve a stuffing-like consistency. Squeezing the mixture should hold it together without making it mushy.

Step 4: Assembly Magic

  • Place seasoned chicken on top of the dressing mixture in your roasting pan. Pour remaining broth around the sides. Cover tightly with foil.

Step 5: Low and Slow Cooking

  • Roast at 325°F for 1 hour 45 minutes covered, then remove foil for final 30 minutes. Internal chicken temperature should reach 165°F.

Step 6: Rest and Serve

  • Let the dish rest 10 minutes before carving. This allows juices to redistribute and dressing to set properly.
