Ingredients

  • 2-3 lbs chuck roast or round steak cut into serving pieces
  • 2 tablespoons olive oil
  • 1 packet onion soup mix
  • 2 lbs baby potatoes halved
  • 1 large onion sliced
  • 3 carrots cut into chunks
  • 3 celery stalks chopped
  • 4 cloves garlic minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste

Instructions

Step 1: Prepare Your Ingredients

  • Cut your steak into serving-sized portions and prepare all vegetables. Using paper towels, pat the steak dry to improve the adhesion of the seasoning.

Step 2: Season the Steak

  • To get the most flavor out of your crockpot steak, liberally season both sides of your steak pieces with salt, pepper, and half of the onion soup mix.

Step 3: Optional Browning

  • Heat olive oil in a large skillet over medium-high heat. Brown steak pieces for 2-3 minutes per side to develop a rich crust that enhances the final flavor of your crockpot steak.

Step 4: Layer in Crockpot

  • Place browned steak in the bottom of your crockpot. Layer potatoes, onions, carrots, and celery around and on top of the meat.

Step 5: Create the Cooking Liquid

  • Whisk together beef broth, remaining soup mix, gravy mix, Worcestershire sauce, and herbs. Pour this mixture over your crockpot steak.

Step 6: Cook Low and Slow

  • Cover and cook on low for 6-8 hours or high for 3-4 hours until the steak is fork-tender and potatoes are perfectly cooked.

Step 7: Thicken the Gravy

  • Mix cornstarch with 2 tablespoons cold water. Stir into the crockpot during the last 30 minutes to create a rich gravy for your crockpot steak.
