Ingredients

  • Italian sausage mild or spicy
  • Heavy cream
  • Freshly grated Parmesan cheese
  • Garlic & onion
  • Chicken broth
  • Spinach or kale
  • Ditalini Pasta
  • tomatoes

Instructions

Step 1: Brown the Sausage

  • Heat a splash of oil in your pot, add the Italian sausage and use a spoon to break it up. You’ll know it’s ready when it’s golden and the kitchen smells.

Step 2: Sauté the Aromatics

  • Add chopped onions and minced garlic right into the sausage drippings. Stir until the onions turn translucent and everything smells intoxicating.

Step 3: Add Broth and Pasta

  • Add the chicken stock and mix with the pasta and chopped tomatoes. Stir everything together. Cook over medium heat for 10 to 12 minutes, until boiling and cooked through.

Step 4: Stir in Cream and Parmesan

  • Reduce the heat. Then slowly add the cream cheese and grated Parmesan cheese, stirring constantly. Cook the mixture for 5 to 7

Step 5: Add Greens and Adjust Seasoning

  • add kale, spinach, or a sprinkling of parsley. Add salt, pepper, and perhaps a little ground red pepper to taste.
