  • 2 pounds boneless chicken thighs or chicken breast
  • 2 tablespoons vegetable oil
  • cup all-purpose flour
  • 1 large onion diced 1 green bell pepper,
  • 2 celery stalks chopped
  • 4 garlic cloves minced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 2 cups sliced okra
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 2 green onions sliced
  • Fresh parsley for garnish

Step 1: Prepare the Chicken

  • Season the chicken with salt, pepper, and paprika. Cut larger pieces into manageable chunks

Step 2: Create the Roux

  • Heat oil in a large pot over medium heat. Whisk in the flour continuously until the mixture becomes a deep golden brown.

Step 3: Add the Vegetables

  • Add onion, celery, and bell pepper directly into the roux. Stir frequently for about five minutes until softened and fragrant.

Step 4: Add Garlic and Seasonings

  • Mix in garlic, thyme, bay leaves, paprika, and cayenne. Cook briefly, Thirty seconds is usually enough.

Step 5: Build the Broth

  • Slowly pour in the chicken broth while stirring constantly. Add tomatoes and Worcestershire sauce. The mixture should become smooth and silky.

Step 6: Cook the Chicken

  • Add the seasoned chicken pieces. Bring everything to a gentle simmer. Cover partially and cook for approximately 40 minutes.

Step 7: Add Okra

  • Stir in the sliced okra. Continue simmering for another 15 minutes until the soup thickens slightly.
