Ingredients
  

  • 2 lbs boneless chicken thighs
  • 1 medium green cabbage chopped
  • 1 large yellow onion sliced
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup chicken broth

Instructions
 

Step 1: Season and Sear the Chicken

  • Pat chicken pieces completely dry with paper towels. Season generously with salt, pepper, and half the paprika.
  • Heat olive oil in your skillet over medium-high heat until shimmering. Sear chicken pieces for 4-5 minutes per side until golden brown.

Step 2: Build the Flavor Base

  • Remove chicken and set aside. In the same pan (keep those delicious browned bits), add sliced onions. Cook for 3-4 minutes until they start softening.
  • Toss in minced garlic and remaining spices. Stir constantly for about 30 seconds

Step 3: Add the Cabbage Magic

  • Add chopped cabbage to the pan – it will look like a mountain at first, but trust the process. Pour in chicken broth and give everything a good stir. The cabbage will start wilting almost immediately.

Step 4: Bring It All Together

  • Nestle the seared chicken pieces back into the pan, skin-side up if using thighs.
  • Cover and simmer for 15-18 minutes until chicken reaches 165°F internal temperature. The cabbage should be tender but not mushy.
