  • olive oil
  • coarse salt
  • black pepper
  • garlic powder

Instructions
 

1. Prep the ribs

  • Pat the ribs completely dry—this small step makes a huge difference in texture. Water is the enemy of a good crust. Rub them with olive oil, then coat generously with your spice mix.

2. Preheat and arrange

  • Get that oven ready. Set it to 350°F and let it fully preheat—don’t rush this part. Even heat matters more than you think.
    Place the ribs on a foil-lined tray, bone side down.

3. Cover and cook

  • Wrap the tray tightly with foil—no gaps, no shortcuts. This locks in steam and keeps the ribs tender. Bake for about 2 hours.

4. Uncover and finish

  • Careful here. Remove the foil slowly—hot steam escapes fast. Brush the ribs with BBQ sauce or glaze if you like that sticky finish. Return them uncovered for 20–30 minutes.

5. Rest before serving

  • Wait. Just a bit. Leave the ribs to rest for 10 minutes before slicing them. This will help the juices to return to the meat.
